A Sample

preheat oven to 350 degrees. coat a loaf pan (or 2 mini pans) with cooking spray.

in ziplock bag (or bowl), mix 3/4 c whole-wheat flour, 1/2 c all purpose flour [i didn't have wheat flour so I just subbed in reg flour], 1/2 tsp baking soda, 1/4 tsp baking powder, 1/2 tsp salt, 1/2 tsp cinnamon [i dashed more than that...yum]. set aside.

in larger mixing bowl, mix 1/2 c brown sugar and 1/4 c canola oil [i used 1/2 applesauce, 1/2 oil]with wooden spoon until well combined. mix in 2 large egg whites, 1-1/2 c banana puree (about 2 large bananas), 1/2 c cauliflower puree and 1 tsp vanilla. add the flour mixture and mix just until combined.

pour batter in loaf pan. bake until toothpick inserted into center comes clean-55-60 minutes for large loaf, 25-30 for mini loaves. let cool on rack for 5 minutes then turn the bread out of pan to cool before serving. it is really moist!

we had it with butter but you can eat it with peanut butter if you want.

Surina and Rowan loved the banana bread. Mallory has never liked banana bread in the first place, so I didn't bother her to eat a bigger bite.
